Ice Cream Cookie Sandwiches

Set aside the calorie count for a moment or two and provide the family with a creation that is sure to please and a rather easy fix within the confines of the kitchen. Gather round household members and make it a family affair with a rewarding treat for their efforts. The ingredients are easy to find and within an hour from scratch, the flavorful result is sure to please the most discerning of cookie and ice cream affectionados. It is a simple task and the recipe for what you need and what you do follows herein...

TOTAL TIME: 1 HOUR

WHAT YOU NEED:
2 cups all purpose flour
3/4 teaspoon baking soda
1 teaspoon salt
1 cup butter room temperature
1/2 cup granulated sugar
3/4 cup brown packaged sugar
2 eggs
3/4 cup semi sweet regular chocolate chips
2 cups mini chocolate chips
Vanilla ice cream

WHAT YOU DO:

Preheat oven to 375°

In a medium bowl, whisk together flour, baking soda, and salt.

In a large bowl, beat butter, granulated sugar, brown sugar and vanilla extract with an electric mixer. Add eggs and thoroughly combine.

Slowly beat flour mixture into wet mixtures. Stir in regular chocolate chips. Scoop 5 tablespoons of cookie dough at a time and shape into round balls. Place each ball 2 inches apart onto baking sheets and bake for 10 minutes or until golden. Remove and let cool on a pan for 10 minutes, then transfer to wire rack and put in freezer for 20 minutes.

Once cookies are chilled, remove and assemble sandwiches. Scoop cup of vanilla ice cream onto one cookie, then top with another to create the sandwich. Sprinkle mini chocolate chips onto a plate and roll sides of sandwiches on plate so the chips stick to the ice cream. Serve immediately or individually wrap and place back into the freezer for a later serving time.
